Fishine is a good example of a doujin author who can make things wholesome and challenging without sacrificing the story. Establishing the inciting incident on the first page and the climax on the last with a montage that affects the later events. It's not the best thing ever, but it's structured very neatly along with great artwork to support that it becomes great to revisit. There's another cool one on Tsumino you'll find about a pizza delivery girl which I think really embodies what makes his work so great.
